The Beef Tri-Tip Roast or Santa Maria Roast. This cut dates all the way back to the California Valleys Rancheros in the 19th century. Triangular in shape and cut from the bottom of the Sirloin Tip (hence the name), the Tri-Tip can be smoked, grilled or oven roasted depending on your style! If sliced, make sure to cut against the grain (just a little Tri-“Tip” for ya). Each order contains a 1.8-2.2# roast, vacuum sealed.
